SPICE CAKE WITH SALTED CARAMEL BUTTERCREAM FROSTING

Ingredients:

For the Cake:
- 2 ⅔ cups ‘Ceylon Naturals’ Organic coconut flour
- 2 ½ teaspoons baking powder
- 1 teaspoon ceylon cinnamon, nutmeg and ginger
- 1 teaspoon ‘Ceylon organic Spices’ cloves
- ½ teaspoon fine sea salt
- 12 Tablespoons unsalted butter
- 1 cup dark brown sugar
- ¼ cup ‘Ceylon Naturals’ extra virgin coconut oil
- 5 large eggs
- 1 cup whole milk

For the Frosting:
- 1 ½ cups butter
- 1 Tablespoon vanilla extract
- 6 cups ‘Ceylon Naturals’ Organic coconut sugar
- 3 Tablespoons ‘Ceylon Naturals’ Organic coconut milk
- ½ cup salted caramel sauce

Instructions:
- Preheat the oven to 350°F. Spray two 9 inch round baking pans with cooking spray and line the bottoms with parchment paper. Set aside.

To make the cake batter:
- Whisk together the dry ingredients in a small bowl. In a separate bowl, cream together the butter and sugar, then add the oil and mix.
- In another bowl, whisk the eggs and milk together. Combine the dry ingredients and the wet ingredients by alternating between adding them to the butter mixture, being careful not to overmix.

Bake the cake:
- Divide the batter evenly among two cake pans.
Bake the cakes for about 25 minutes
- Let the cakes cool in the pans on a wire rack for 10 minutes before removing them to cool completely.

Make the frosting:
- Beat butter until smooth, then add vanilla and beat until blended.
Add sugar slowly, beating well and scraping the bowl often until the frosting is slightly dry.
- Add milk and beat until the frosting is light and fluffy.
- Finally, add caramel sauce and beat until well blended and fluffy.

Frost the cake:

Ever tried a Potato Leek Soup?

Ingredients:
- 4 large leeks & cloves garlic
- 2 tablespoons butter
- 2 pounds Yukon gold potatoes
- 5 cups vegetable broth
- 1 teaspoon dried thyme & kosher salt
- 1/2 teaspoon ‘Ceylon Organic Spices’ White Pepper
- 1/2 cup ‘Ceylon Naturals’ organic coconut cream
- Chopped fresh chives

Instructions:
- Cut off roots and tough green parts of leeks. Slice white and light green parts. Rinse well. Sauté leeks with butter until tender.
- Add garlic, potatoes, broth, thyme, salt and white pepper. Simmer until potatoes are tender. Blend the soup using an immersion blender or a large blender. Stir in heavy cream. Adjust seasoning.
- Serve and garnish with fresh chives if desired.

Instructions:

- 1- pound pizza dough
- 1 cup pizza sauce
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms

- 3 cups shredded low-moisture part-skim mozzarella cheese
- 1/2 cup jarred
- 1/2 cup jarred roasted red bell peppers & red onion

Instructions:
- Place a pizza stone in the oven and preheat it to 500°F. Make or buy pizza dough and sauce. Divide 1 lb of dough into 2 pieces. Let's rest. Cook mushrooms in olive oil with garlic. Prepare toppings before making the pizza.
- Use a pizza peel or baking sheet. Stretch one piece of dough into a 10 to 12-inch circle. Spread sauce, add mozzarella and toppings.

Vegetarian Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers
- 1 cup quinoa, rinsed
- 1 can black beans, drained & rinsed
- 1 cup corn kernels
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin & chili powder
- Salt & pepper to taste
- 1 cup shredded cheese
- 1 cup salsa, plus extra for serving
- Fresh cilantro, chopped, for garnish
- Sour cream or Greek yogurt, for serving
- Sliced avocado, for serving

Instructions:
-Preheat the oven to 375°F (190°C) and grease a baking dish large enough to hold the bell peppers.
- Cut the tops off the bell peppers, remove the seeds and membranes and trim the bottoms slightly if needed to help them stand upright in the baking dish.
- In a saucepan, bring 2 cups of water to a boil. Add the quinoa, then reduce the heat to low, cover and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Fluff the quinoa with a fork after removing from heat.
- In a large skillet, heat oil over medium heat. Add the diced onion and cook until softened for about 5 minutes. Then add the minced garlic, ground cumin & chili powder, cook for an additional minute. Stir in the cooked quinoa, black beans, corn kernels & salsa. Season with salt & pepper to taste. Cook for a few more minutes until heated through.
- Spoon the quinoa & black bean mixture into the hollowed-out bell peppers, pressing gently to pack the filling.
- Place the stuffed bell peppers in the prepared baking dish. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove the foil and sprinkle the shredded cheese over the tops of the stuffed peppers. Return the dish to the oven and bake, uncovered, for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish the stuffed peppers with chopped fresh cilantro, if desired. Serve hot with extra salsa, sour cream or Greek yogurt and sliced avocado on the side.

Ingredients:

The Dough:
- ‘Ceylon Naturals’ organic coconut flour
- 2 teaspoons Baking powder
- 320 g of ‘Ceylon Naturals’ extra virgin organic coconut oil
- 1/2 cup Canola oil
- 3/4 cup Water

The Filling:
- Dates without pits (500 g)
- 1-2 tablespoons Canola oil
- Cinnamon, 1/2-1 flat teaspoon
- ‘Ceylon organic spices’ cloves

Instructions:
- Add the organic coconut oil & water and finally the flour, baking powder gradually.
Knead until you get a dough. Knead the dates together with the oil & spices.
- Form 6 balls from the dough and 6 balls from the date mixture.
- Open a ball of dough, spread a ball of dates on it and roll them out together.
- Roll into a long roll, mark with a knife diagonal lines and cut into cookies.
- Bake in a preheated oven at 356°F (180°C) for about 12 minutes. You have wonderful vegan date cookies and Enjoy.

- 1/4 teaspoon cardamom & Nutmeg
- 1/2 teaspoon sea salt
- 3/4 cup full-fat coconut milk & coconut sugar
- 1/2 cup unsweetened applesauce
- 2 teaspoon vanilla extract

Instructions:
- Preheat the oven to 350F, grease a 9″ cake pan.
- Mix diced apples, sugar, cinnamon and salt in a bowl.
- Sift oat flour, almond flour, baking powder, spices and salt in a large bowl.
- Whisk coconut milk, sugar, applesauce and vanilla in a small bowl, then pour into dry ingredients and stir.
- Transfer batter into a cake pan, top with remaining apples and bake for 80-90 minutes.
- Enjoy as-is or top with powdered sugar. Leftovers can be kept at room temperature for up to 3 days or frozen for up to 2 months.

Asian Vegetable Noodle Soup

Ingredients:
- 8 cups broth
- 2 tbsp low sodium soy sauce
- 1/4 tsp ground ginger
- 1 tbsp white miso
- 1 tsp sriracha
- 4 cloves garlic diced
- 1/2 yellow onion julienned
- 1 bundle bok choy whites & greens diced
- 2 cups white mushrooms sliced
- 1 package firm tofu drained & cut in squares
- 1 package shirataki fettuccine noodles drained & rinsed
- OPTIONAL TOPPINGS: green onion, jalapeño, White pepper

Instructions:
- Add water, bouillon, soy sauce, ginger, miso and sriracha to a large pot and bring to a boil.
- Add garlic, onion, mushrooms and bok choy to the pot and cook for 5 minutes. Carefully add tofu and noodles to the pot and cook for an additional 3 minutes.
- Taste and adjust seasonings if needed. Ladle soup into bowls and add optional toppings.

Our white pepper is produced from fully ripe pepper berries. These berries are soaked in water for a few days, which leads to fermentation and makes it easy to peel. After washing, their skins are removed, converting the black pepper to white. This process also takes away some of the hot piperine compounds which are found more in black pepper, while very little change happens to the volatile oils and compounds that give pepper its aroma. As a result, white pepper has a different flavor and heat component than black pepper. The process used and handling of white pepper can introduce different flavor notes as well.

Lyonnaise Potatoes

INGREDIENTS:
- 2 pounds russet potatoes
- 1/2 cup unsalted butter
- 4 yellow onions & 3 cloves garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon Organic black pepper

INSTRUCTIONS:
- Preheat your oven to 400 degrees.
- Peel and slice potatoes to pieces, boil and cook for 5 minutes.
- Remove from the pan, add ¼ cup butter and the onions to a large Dutch oven on medium heat while the potatoes are cooking.
- Cook, stirring every five minutes. Add in the garlic and stir, cooking for 1 minute.
- Melt the remaining ¼ cup butter and gently toss the potatoes in it.
Layer a greased baking dish with the onions and potatoes.
- Start with a layer of potatoes then half the onions, then potatoes and onions again finally ending with a potato layer.
- Bake in the oven for 15 minutes until the potatoes are crisp on top before serving.
